The Life-Changing Loaf of Bread?

I'm a chiropractic student so naturally I work part time as a receptionist for a chiropractic clinic. My boss and I share healthy recipes, and last week she told me about the "Life-Changing loaf of bread". At first I thought it was a meme, but she showed me photos from http://www.mynewroots.org/site/2013/02/the-life-changing-loaf-of-bread/ (looks like I will have to start following that blog, it looks amazing!) and my interest was awakened. The bread just looked so hearty and scrumptious, the sort of bread that would fill you up with half a slice, that I had to try it! After taking her advice that putting whole almonds in made for a marathon chewing experience, I ground up my almonds coarsely in the blender. I also couldn't find any flax seeds, so I just put in more almonds and oats. So here were the ingredients I used:

1 cup sunflower seeds
3/4 cup almonds
1 3/4 cups rolled oats
2 Tbsp. chia seeds
4 Tbsp. psyllium seed husks (3 Tbsp. if using psyllium husk powder)
1 tsp. fine grain sea salt (add ½ tsp. if using coarse salt)
1 Tbsp. maple syrup (for sugar-free diets, use a pinch of stevia)
3 Tbsp. melted coconut oil or ghee
1 ½ cups / 350ml water


You basically mix all the dry ingredients together then add the wet ingredients (all in a silicone pan). Give it a mix until it gets super thick and then let it rest for >2hrs. Bake at 180 degrees for 20 minutes, then turn it out of the pan and bake for a further 20 minutes until it sounds hollow when you tap it. Voila! Wait for it to cool fully then slice and toast it.

I was so full after one small slice of this bread. But despite my fullness, I still wanted to eat it because it was so delicious!





I love how the sweetness kicks in after the first few chews. I'm really happy to have been told about this recipe because I do indeed think it can change my life as I don't eat store bought bread.
